Egg devil is an famous Indian street food having boiled egg covered with a spicy potato mixture coated with bread crumbs and then deep fried in oil. It tastes amazing and perfect for your 'go to cravings' while wandering on street! It's crunchy on outside and spicy on inside with egg in the core making it completely delicious.
It's specially a Bengali street food (Calcutta, India) and all of us residing here are obsessed with egg devil!

Here's the recipe-
Serve -3
Preparation- 30 minutes
Cooking time- 15 minutes
Ingredients-
• Potato (3 medium)
• Egg (2)
• Onions chopped (2 big)
• Ginger garlic paste (4 tbsp)
• Green Chillies chopped (3)
• Turmeric powder (2tsp)
• Cumin powder (1tbsp)
• Red chilli powder (2 tbsp)
• Bhaja masala (2 tbsp)
• Refined oil (for deep frying)
• Bread crumbs (60 g)
• Maida (10 g)
• 1 Beaten egg
• Salt to taste
RECIPE-
Potato preparation ( Aloor cokha)-
1. Boil 3 big potatos and 2 eggs, let it get cooled.
2. Mash the potatoes with the help of a masher or you can also use your hands.
3. In a pan heat 4 tbsp of refined oil, add 2 tsp of cumin seeds. Stir it for a minute at medium flame.
4. Add the chopped onions and cook until it becomes translucent.
5. Then add the mashed potatoes, 3 tbsp of salt or according to taste, 2 tbsp red chilli powder, 2 tsp turmeric powder. Give it a thorough mix.
6.Cook everything untill the oil separates from the potato mixture.
7. Add chopped green chillies and bhaja masala(Roasted cumin seeds, dry red chillies, coriander seeds powder) and your potato mixture is ready, let it get cooled down.
Egg devil preparation-
✓Beat one egg in a bowl
✓Add about 5 tbsp of maida in a plate (for coating the egg devils)
✓Add bread crumbs in a bowl (60 g)
Giving the shape-
1. Take the potato mixture in one palm, flatten it using your another hand, add half egg on it then cover it completely with the potato mixture.
2. First cover it in the maida, then roll it in the beaten egg and finally cover it with the bread crumbs.
3. Again put it in the beaten egg and coat it once again in the bread crumbs. ( You can skip this step but this step will make the egg devils more crunchy and tasty.)
4. Repeat it for the rest of the half eggs.
5. Keep it in the fridge for atleast 15 minutes then deep fry them in a kadhai on medium flame for 6-7 minutes till it becomes golden brown.
