It's Rainy season and the availability of Corn (bhutta) is high and reasonable. Corn tastes so good in every dish to be it's simply roasted as it's served in roadside served with rock salt and lemon or it's deep-fried into crispy and spicy chaat. Tastes good in every form.
Also, it has great calorific value and has health benefits.

It is a dish in which corn kernels are coated with cornflour and deep-fried until they turn crispy and golden brown. They are then simply tossed in chopped onions, green chilies, chaat masala, and lemon.
Sounds perfect right? So here it's a recipe ⤵️
SERVE- 4
PREPARATION TIME- 15 minutes
COOKING-15 minutes
TYPE- Starter
FLAVOUR- Crispy, spicy
INGREDIENTS-
1. Corn kernels ( 200g)
2. Cornflour ( 1/2cup)
3. Onion ( 1 large)
4. Green chilies (2-3)
5. Lemon juice
6. Chaat masala
7. Salt to taste
8. Water (1/4 cup)
9. Refined oil ( for deep frying)
10. Coriander leaves (for garnishing)
RECIPE-
1. Put 2 wrestles to the corn kernels in a pressure cooker so they get boiled well and turn soft. Let the steam get completely out. (You can extract the corn kernels simply with the help of a knife cutting from the outer side or edges of whole corn (bhutta). The kernels will easily come out.)
2. In a bowl, add 1/2 cup cornflour to the corn kernels, salt to taste, 1 tbsp red chili powder and add water accordingly so that the cornflour just sticks to the kernels. Do not over add water, amount it to a consistency that the cornflour sticks to the kernels and is a bit mushy.
3. Heat oil in a pan for deep frying, make sure the oil is hot, also do not overheat the oil.
4. Carefully put the kernels to the hot oil, keep the gas on low flame. Fry it until it becomes golden brown. (Be careful while frying as the kernels may splutter. Fry them at low flame which will make them soft and crisp.)
5. Meanwhile chop one large onion, 2-3 green chilies. Set aside.
6. In a bowl, add the fried corn kernels, chopped onions, green chilies, 1 tbsp chaat masala, and squeeze one lemon wedge to it. Toss it 3-4 times.
7. Garnish with coriander leaves and serve hot and crisp.
