Ras malai   is a classic Indian dessert originating from the eastern part of India specially from Bengal. Rasmalai is a Bengali sweet dish where ' ras ' means juice and ' malai ' means cream prepared by absorbing the flat rasgullas in malai topped with dry fruits and saffron. It is extremely delightful, soft, and juicy making it the perfect dessert.  This Raksha Bandhan make this amazing tasty and easy homemade Ras Malai with simple indrigients. Its recipe is easy and comes under budget comprising of all the simple available ingredients with which you make make it at home itself.  Follow the simple recipe step by step and you will end up making the perfect soft ras malai at  home.  RECIPE: Ingredients- • Milk (2 packets 500ml each) [ for 6 Ras malai ] • Sugar ( 200g) • Cardamom powder ( 1tsp) • Dry fruits (Almonds, pistachios, cashews or any of your choice) • Saffron  • Vinegar/Lemon (2 tbsp) • Water (500ml) Recipe : For the Ras : 1. Matar dal pakora is a very famous street food over the streets of India. It is crispy outside and spicy on inside and tastes amazing. Matar dal is grinded with spices and then deep fried and served with green chutney or mustard sauce. You will have utmost pleasure of this dish in rainy season complimented with a hot cup of hot tea. Also the dish is very cheap and costs only 10 rupee 100g and fully worth the taste! 
So sharing it's simple but perfect recipe, do follow the simple steps and you will end with perfect result.

Ingredients-
Matar dal (100g)
• Ginger garlic paste (4 tbsp each)
• Green chillies ( 5)
• Onion (1)
• Red chilli powder (2tbsp)
• Turmeric powder (1tbsp)
• Bread crumbs (or cornflour/ rice flour) ( 1/4 cup)
• Salt to taste
• 1/4 cup water

Recipe-
1. Wash and soak the matar dal for atleast 20 minutes in water. 
2. In a grinder, add the soaked matar dal, Ginger garlic, chopped Onion and blend it into a rough paste, add water accordingly.(Don't blend into a smooth paste as it will lose its texture)
3. Add 2 tbsp of red chilli powder, 2 tbsp turmeric powder, salt as per taste, chopped green chillies and 1/4th cup bread crumbs (bread crumbs give the roadside texture amd crispiness to your pokoras, if you don't have breadcrumbs you can also use 1/4th cup cornflour or rice flour in its place.)
4. Heat oil in a kadhai (pan), put the mixture in small amounts into the oil. Fry them in low to medium flame for about 8-10 minutes till golden brown and crispy. 
5. Serve hot with pudina chutney or mustard sauce.
