Step by Step Rasmalai Recipe | How to Make Soft Rasmalai at Home |



Ras malai
 is a classic Indian dessert originating from the eastern part of India specially from Bengal.
Rasmalai is a Bengali sweet dish where 'ras' means juice and 'malai' means cream prepared by absorbing the flat rasgullas in malai topped with dry fruits and saffron. It is extremely delightful, soft, and juicy making it the perfect dessert. 
This Raksha Bandhan make this amazing tasty and easy homemade Ras Malai with simple indrigients.
Its recipe is easy and comes under budget comprising of all the simple available ingredients with which you make make it at home itself. 

Follow the simple recipe step by step and you will end up making the perfect soft ras malai at  home. 

RECIPE:

Ingredients-
• Milk (2 packets 500ml each) [ for 6 Ras malai]
• Sugar ( 200g)
• Cardamom powder ( 1tsp)
• Dry fruits (Almonds, pistachios, cashews or any of your choice)
• Saffron 
• Vinegar/Lemon (2 tbsp)
• Water (500ml)

Recipe:
For the Ras:

1. In a pan, heat 500 ml of toned milk give it a boil. Add 1 tsp of saffron (use good quality saffron). Stir in between or continuously if possible on low to medium flame.
2. Add chopped dry fruits of your choice, I used almonds and cashews, add 1/2 tsp of food colour ( totally optional) for the perfect colour. 
3. Add 1 tsp of cardamom powder. Stir continuously under low to medium flame for about 10 minutes. Switch of the flame and set aside. 

For the flat rasgullas:

1. In a pan, add 500 ml of toned milk, give it a boil. Once the milk starts to boil switch off the flame. 
2. In a bowl mix 2 tbsp of vinegar (or lemon) and 2 tbsp of water. Add this to the milk one at a time and slowly keep stirring the milk. 
3. Once the milk starts to curdle, let it get cool down completely. 
4. Put a muslin cloth or any cotton cloth over a sieve. Pour the curdled milk and wash it with drinking water to remove the essence of vinegar or lemon. Let the water get completely drained.
5. Press the muslin cloth slowly to drain the excess water or you can simply hang it for about 20-30 minutes. 
6. Knead the curdled milk, use your palm for kneading. Knead it for about 30 minutes till you get a smooth dough. 
7. Make small balls out of it and give it a shape of flat balls or rasgullas. 
8. In a saucepan, boil 500 ml of water, to it add 200 g of sugar. Stir untill the sugar melts completely. 
9. Pour the rasgullas one by one to the sugar syrup and let it get boiled for 15-20 mintutes under medium flame. Flip the rasgullas after 10 minutes and cook them until the rasgullas are soft and juicy. 
10. In bowl, take 6-7 ice cubes, first add the sugar syrup to it, then add the rasgullas. This step is for the rasgullas to get stable and to prevent them from breaking. 

Final step-
1. Press the rasgullas and remove the excess water from it. Put them into the ras and let it get completely soaked in it. 
2. Garnish it with your choice of dry fruits.
